1. Kung Pao Chicken

This classic dish combines tender chicken, crispy peanuts, and vibrant vegetables in a spicy, savory sauce.

Ingredients:

  • 1 lb boneless, skinless chicken thighs, diced
  • 1/2 cup roasted peanuts
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp Szechuan peppercorns
  • 2 tbsp vegetable oil

Instructions:

  1. In a bowl, combine soy sauce, hoisin sauce, rice vinegar, and set aside.
  2. Heat vegetable oil in a pan over medium heat. Add the chicken and cook until browned.
  3. Add garlic, bell peppers, and onions. Stir-fry for about 5 minutes until the veggies are tender.
  4. Pour in the sauce and add peanuts, cooking for another 2 minutes.
  5. Serve hot over rice or noodles, garnished with green onions if desired.

2. Vegetable Fried Rice

Vegetable fried rice is a versatile dish that makes use of leftover rice and whatever vegetables you have on hand.

Ingredients:

  • 3 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 2 green onions, sliced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the mixed vegetables and stir-fry until they are tender.
  3. Push the veggies to one side, pour in the beaten eggs, and scramble until cooked.
  4. Add the day-old rice and soy sauce, mixing everything thoroughly. Season with salt and pepper.
  5. Garnish with sliced green onions before serving.

3. Mapo Tofu

This flavorful dish features silken tofu simmered in a spicy, aromatic sauce, making it great for tofu lovers.

Ingredients:

  • 1 block (14 oz) silken tofu, cubed
  • 1/2 lb ground pork (optional)
  • 2 tbsp doubanjiang (spicy bean paste)
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 2 tbsp vegetable oil
  • Sichuan pepper, to taste
  • Green onions, chopped for garnish

Instructions:

  1. Heat vegetable oil in a pan over medium-high heat. Add ground pork, if using, and cook until browned.
  2. Add garlic and ginger, sautéing until fragrant.
  3. Stir in the doubanjiang and cook for another minute before adding vegetable broth and soy sauce.
  4. Gently add the cubed tofu, letting it simmer for about 5-7 minutes.
  5. Thicken the sauce with the cornstarch mixture and season with Sichuan pepper to taste
